Squash Soup Shawns
1 Servings
1 Acorn squash
1 Red Onion
3 Mushrooms
3 Tbl Olive Oil
4 Cup Stock (or water)
1/4 Cup Cream
1 Tsp Pepper
1 Tsp Salt
1 Tsp Honey
1 Tsp Garlic (minced)
1/2 Tsp Ginger (minced)
Cut the squash, mushroom and onion into chunks. place on a foil lined
baking sheet. At 350f for about 45 minutes bake them until done.
Place the veg into a big pot mash with potato masher a bit, add in
your spices and honey now, then add in the 3-4 cups of stock and
blend with emersion blender until smooth. Then add in the cream and
blend a bit more.
Simmer for 20 mins with a bay leaf. Serve.
